In Germany, fish meant for raw dishes like sushi or sashimi must undergo a strict freezing process. It must be frozen at -20°C for at least 24 hours or at -35°C for 15 hours to eliminate parasites. This ensures the fish is safe to eat raw. However, fish from the fresh counter or packaged fish from the freezer section should generally be cooked thoroughly, even without specific labeling. Even fish caught by oneself should be cooked thoroughly, especially if not professionally frozen.
